Cucumber Onion Tomatoes Salad
- three medium cucumbers, peeled and sliced 1/4 inch thick
- one medium onion, sliced and separated into rings
- three medium tomatoes, cut into wedges
- half cup vinegar
- a quarter cup sugar
- one cup water
- two teaspoons salt
- one teaspoon fresh coarse ground black pepper
- a quarter cup oil
- one teaspoon chopped fresh mint (optional)
1. Combine all ingredients in a large bowl.
2. Toss well to mix.
3. Refrigerate at least two hours before serving.
