Nandos chicken served with wedges and spiced corn recipe

Ingredient:

  • Nandos full house 

  • 1 baby chicken cut into quarters i used skinless chicken 

  • Wash well make gashes on chicken 

  • Marinate with the ff 

  • 1 tab garlic

  • 2 tsp green masala 

  • 1 fresh lemon squeezed 

  • Olive oil 

  • 2 tsp salt 

  • 1 tsp lemon pepper 

  • Blk pepper 

  • 2 tsp mayonaisse 

  • 1 tab nandos lemon and herb sauce 

  • Marinate overnight 

Sauce:

Butter with garlic
Nando’s peri peri medium 1/2 bottle can be used with any nandos sauce flavor, however only one flavor should be used. don’t combine flavors
2 tablespoons perinaisse
Parsley
1/2 teaspoon red chili powder on the stove to boil
On an electric griddle, pan fried the chicken in butter until it is slightly browned, stirring often. Den applied the glaze with a silicone pastry brush.
Place the chicken on a serving plate and baste it with the sauce.
Serve with corn on cob ,wedges ,,portugese rolls ,\s I drizzled the same sauce over the roasted corn

Method:

  • I used olive oil in the marinate

  • I did not have perininaise

  • I basted the chicken and with the remainder sauce I added more sauce and milk.

  • Stick to using just one flavour nandos sauce I used peri peri and it was perfect.

  • Use some of the sauce to brush over the corn and grill for a few mins in the oven.

  • If u using fillets like I did , make sure not to over cook or grill the fillets. Make slits in the chicken or fillet. I marinated the chicken in the morning and grilled it in the afternoon.

Wedges 

  • Boil potatoes wedges with veg spice ,  strain water and add the Cayenne pepper, parsley, olive oil and calistos chips spice. Toss and layer on a tray bake for 15/20 on 180 degrees
